Yum! I don’t believe I’ve ever made artichoke soup before. Lovely. I really like how you include composting in your recipes. I totally want the world to compost!

Rosemary, that’s funny! I wasn’t sure about the hearts, either. The only artichoke hearts I’ve used before are marinated and in jars. There was really no cutting involved, except that I trimmed the stems a bit. I just simmered them and, after they cooled down, I peeled them. I scraped the edible flesh off each leaf as I removed it and slowly worked my way down to the heart, which turns out to be not much but a nub of flesh attached to the top of the stem. I actually called Stewart into the kitchen when I got to the heart and asked, “Is that all there is?” That is, indeed, all there is. They’re funny vegetables, for sure, but not as scary as they look!

Artichokes scare me. I don’t even know if I could find the “heart” and what about the “choke”. So glad you tackled it and made it seem a bit more accessible. I’m going to need a demonstration on cutting up an artichoke though before I take one on…
