		<description><![CDATA[Rosemary, that&#039;s funny! I wasn&#039;t sure about the hearts, either. The only artichoke hearts I&#039;ve used before are marinated and in jars. There was really no cutting involved, except that I trimmed the stems a bit. I just simmered them and, after they cooled down, I peeled them. I scraped the edible flesh off each leaf as I removed it and slowly worked my way down to the heart, which turns out to be not much but a nub of flesh attached to the top of the stem. I actually called Stewart into the kitchen when I got to the heart and asked, &quot;Is that all there is?&quot; That is, indeed, all there is. They&#039;re funny vegetables, for sure, but not as scary as they look!]]></description>
